For dinner tonight we had Citrus King prawn Salad and rice. We had the rice as I was trying to use it up from another dinner!

The Citrus King Prawn Salad is based on a recipe by

Citrus King Prawn Salad

Prep Time: 10 Minutes    Cook Time: 10 minutes      Serves: 6


For the prawns:

  • 1 Tablespoon Olive Oil
  • 1 Cup Fresh Orange Juice (About 2 oranges)
  • 1/2 Cup Fresh Lemon Juice (About 3 lemons)
  • 5 Cloves Garlic, minced (Try a grating plate!)
  • 1 Tablespoon Red Onion, finely chopped
  • 1 Tablespoon Fresh Parsley, chopped
  • Pinch of Red Pepper Flakes
  • 1.3kg King Prawns, peeled and deveined

For the salad:

  • 12 Cups of Spinach (or other greens)
  • 1 Tablespoon Olive Oil
  • Juice of 1/2 Lemon or 1/2 Orange
  • 1 1/2 Avocados
  • 170g Sliced Almonds, toasted


For the Prawns:

  1. In a medium bowl, mix together Olive Oil, Orange juice, Lemon Juice, Garlic, Onion, Parsley and Red Pepper Flakes.
  2. Pour the mixture into a large frying pan over a medium heat. Bring to a simmer and cook until reduced by half. (Around 5-8 minutes)
  3. Add the Prawns, season with Salt and Pepper, cover, and cook until they turn pink, around 5 minutes.

For the Salad:

  1. Wash the spinach and toss in a bowl with the prawns.
  2. Lightly drizzle over the olive oil, the lemon or orange juice and some of the prawn sauce.
  3. Add the avocados and sliced almonds. Season if needed.
  4. Put on a plate, add more prawn sauce if you like.
  5. Enjoy!
